CLICK HERE TO SEE EASTMAN"S IN THE NEWS

Carolyn and Ed Eastman are a husband and wife team that wanted to do something different in the commercial fishing industry.

Carolyn’s background is in Education for 13 years. She has been an independent consultant for 8 years traveling nationally working with the Department of Education in many states.

Ed’s background is in commercial fishing. He has been a commercial fisherman for about 25 years. Fishing out of Seabrook, Virginia, New Jersey.

Putting the two backgrounds together, they began talking about how difficult it is to get local products out to local consumers. They also realized how little the general public knew about what was happening to the fishing industry.

Fishermen are not famous for speaking on their behalf. They are hard working people that want to go fishing and make a living. Carolyn hopes to help local fishermen by helping educate the public about local fishing.

The fish market is one way in which they are trying to inform. Carolyn and Ed are trying to carry as much local fish as they can in their market. They hope to connect the local community and local fisherman through fresh, local fish!

http://www.eastmansfish.com/content/5781

What people are saying about our fish

"My husband and I enjoyed the most wonderful seafood dinner last night. The cod was fabulous! The taste and texture was sublime. My husband said it was the best tasting fish he has had in years!!"

It was fun working with you yesterday... I was very happy to be of some help to you and I thoroughly enjoyed meeting you. I think people's responses yesterday were very positive and it is really great that you are able to provide this service to us. Hope to see you before June but if not I will definitely see you then.

Here's my recipe for baked cod or haddock similar to yours... of course the fresher the fish, the better :)

Using a spatula or your hands, lightly spread low-fat Hellman's mayo over fish fillet top and bottom and dip in a mixture of fresh bread crumbs and grated parmesan cheese. Pour 2 tbsp. of melted butter on top and bake at 375 degrees for about 10-12 minutes depending on thickness of fish until it flakes. Serve with fresh lemon slice on the side.

Best,
Lori

Hello, Carolyn,
I had to buy a pound of Cod at the store to make enough for dinner, and we did a taste test. Everyone got half of the fresh and half of the grocery store -- you can guess the results!!

Thank you again.

Maureen

I just wanted to write and let you know that I made the cod that was this week's fish and it was wonderful! This is the first time I am participating in the CSF and am really excited about what comes next. We have already planned a fish dinner get together with our friend Zulma (who is also participating in the CSF this year) for next week. Our plan is to pick up the fish on Monday, figure out how we want to cook it on Tuesday and get together for dinner on Wednesday. With the cod, I made Miso Glazed Cod (a recipe I found on Food Network by Elie Krieger). It came out excellent. Even my one-year old daughter loved it.
Thanks so much for the opportunity to participate in this program. What a great experience!

Take care,

Kelly

http://www.eastmansfish.com/content/5977

This WEEKEND CSF KICK OFFS

Hi ALL!
